Pumpkin Shaped Bread Bowls and Rolls

These are super easy to make and add lots of excitement to any soup. My kids must eat a bowl of potato soup before trick or treating and putting it in a bread bowl shaped and colored to look like a pumpkin adds enough fun that they eat it up.





First to color your dough, just add red and yellow food coloring to your water before you add it to your dry ingredients.

Then shape the dough into 6 medium size balls with square stems on top.

Paint pumpkins with more food coloring, I used a kids watercolor brush.



I also cut little slits along the sides of the pumpkin to add texture and depth.

Bake at 350 for about 20 minutes.

Cool for 10 minutes and then cut the top off.

Dig out the inside of the bowl.

Fill with your favorite soup and enjoy! I really like potato soup, or white chicken chili.

Pumpkin Cinnamon Rolls with Caramel Sauce and Cream Cheese Frosting




This time of year everthing is about the great Pumpkin! Tonight the Great Pumpkin Charlie Brown is on and everywhere I turn I see pumpkins. Thanks to a dear friend I now have a wonderful FAST EASY BREAD recipe with pumpkin in it and maybe just a pinch of sugar! But really who can keep track of how much sugar you eat this time of year!

Make these delicious, pumpkin, sugary pieces of perfection and watch everyone fall in love with pumpkin!

Ingredients:

YOUR Favorite pumpkin pie filling (Libby's easy pumkin pie mix)
7 cups unbleached bread flour

¼ cup brown sugar (can use honey or any sweetener 1:1)

1 tsp salt

2 Tbsp SAF-instant premium yeast

2 tsp  Soy liquid lecithin
 (Do not measure, just easy squeezy quarter size squirts) 


Filling
2 tsp. pumpkin spice
4 Tbsp. Melted Butter
2 Tbsp. Cinnamon
1 cup Brown Sugar

Prepare your favorite pumpkin pie filling. Add the ¼ cup brown sugar, 2 tbsp yeast, 2 tsp liquid soy lecithin, 1 tsp salt to the filling and mix. Add bread flour slowly until you get workable dough. Roll out to about ¼” thick.

FILLING: Brush melted butter over dough. Mix cinnamon, brown sugar and pumpkin spice together and then spread over melted butter on dough. Roll dough into log. Take dental floss (or any cutting utensil) and cut pieces to about 1” thick rolls. Place in greased baking dish, cover and let rise for about 15-20 minutes. Then bake at 375 degrees for 20-25 minutes or until golden. Take out let cool for 5 minutes then drizzle with caramel icing, cream cheese icing or both!

Caramel Icing:
2 tablespoons butter
1/4 cup packed brown sugar
1 tablespoon milk
1/4 teaspoon vanilla extract
Dash salt
1/4 to 1/3 cup confectioners' sugar
Melt butter in a saucepan; stir in brown sugar and milk. Cook and stir over medium-low heat for 1 minute. Stir in vanilla, salt and 1/4 cup confectioners' sugar; beat until well blended. Add more sugar, if necessary, to achieve desired consistency.

Cream Cheese Icing:
2 (8 ounce) packages cream cheese, softened
1/2 cup butter, softened
2 cups sifted confectioners' sugar
1 teaspoon vanilla extract
1/4 cup milk
In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the sugar and vanilla.

i made monkey bread last night because i can't resist the gooey goodness. apparently neither can my daughter because she pulled her little two-year-old self up to the table and we sat like vultures, eating together till the plate was almost clean. it was delicious and fun.

Pizza Rolls were a HIT!


The other night on the new sitcom "The Middle", the parents are trying to get their house to be the fun house or the house where all the kids hang out. The dad tries by providing lots of food including pizza rolls. The pizza rolls are those yucky ones you throw in the microwave. Here at this house or the fun house we made Fast Easy Bread Pizza Rolls. Homemade Pizza Rolls were a hit people, we are officially the fun house! I found this recipe here, but made the dough with Fast Easy Bread. So Easy! So Yummy!

So Easy your Hubby can do it!

Today is Sunday and I didn't have to make dinner. I was taking my Sunday nap and my hubby came and woke me up with the question "Do you want to come eat some homemade from scratch French toast?" Homemade, I said? "From scratch!", he replied. I came into the kitchen to see two loaves of Homemade Bread! He then started to cut one loaf to make yummy french toast! My husband can now cook two things, French toast and Homemade French Toast! Get your husband to make this you won't be disappointed.

First, make your basic white bread.
Ingredients:
Instructions:

1. Mix Dry ingredients. (yeast is a dry ingredient)

2. Make 2 dimples in dry ingredients with tsp. Squeeze the lecithin into the bottom of the dimples about the size of a quarter. Add water slowly, add 1 3/4 cups and then the remaining 1/4 cup. Mix for 1 minute and check consistency. The dough mixer should be sticky and pull itself off bowl.

3. Mix/knead in mixer on medium setting for 5 minutes or knead for 5 minutes by hand.

4. Spray counter and hands with cooking spray and knead for a few seconds to form smooth ball.

5. Cut dough in half and form two loaves.

6. Spray bread pans and place one loaf per pan.

7. Cover pans with dry dish cloth and let rise for 25 mins.

8. Bake at 350 for 25 minutes.

9. Remove from oven and flip loaf out of pan and place on cooling rack.

Then mix 6 eggs, 1/2 cup cream or milk, a little vanilla, grate a sprinkle of nutmeg and add a sprinkle of cinnamon. Whisk or blend all this together.
Get your frying pan or electric griddle to medium, spray with cooking spray or coat with butter and then dip both sides of the bread in the egg mixture.
Cook each side until slightly crispy. We like cinnamon so we sprinkle cinnamon on one side before we flip it. Enjoy!
